Recording 'time' for mock analysis -

As we all know, Speed and Accuracy are two most important parameters for crackin CAT. While accuracy can be easily found out with an assessment of the number of correct answers per total attempted, the speed parameter remains somewhat elusive.
No doubt, the overall speed or even the speed per section can be found out (total time is fixed, and time taken for each section can be recorded comfortably), but what about the speed while solving certain type of question within a section. Coz with this 'time' we can gather details abt our proficiency in solving certain type of questions. But how can a recording be done for the time taken for a set of questions (Jumbled or DI set or RC para etc).
I am sure many ppl would be doing it as of now, but can it be made even finer. I heard a cat-cracker sayin that he used to analyze mocks by counting on the time taken for EACH AND EVERY SINGLE question. Now Junta, tats sounds incredible, but how to go abt recording (or somehow recollecting) time for each single question.
Plz throw some light on this, the timing aspect for mock analysis.
Any practical suggestions regarding the watches, timers (up or down timers) etc will be highly appreciated !!
