I shall try to answer as much as i know from my experience with Infosys as I am working as a Consultant in SAP there. Probably, i can explain you from SAP point of view which holds good for other ERP packages as well.

In the world of ERP, there are only Consultants who are of 2 types: Functional and Technical.
Most of the ppl who come down with an MBA degree in Marketing join as Functional Consultants either in SD or FI module of SAP. From my experience, both SD and FI Modules are dependant on each other and hence the job involves designing the Sales and Finance Processes. And this varies from client to client. So, a Mark guy generally works on SD module of SAP.

The role
may not be technical but in ERP both Fucntioanl and Technical areas go hand in hand. I dont say that the FC does coding, but he will need to havea thorough understanding of the techncalities of the Module in which he/she is working. Same holds good for a TC as he/she is expected to know the Domain or Module in which he/she is working. As i already said, SD or even the Logistics module of SAP constitutes 'Marketing'.

I really donot understand what you mean by exit options, but if i can make a wild guess, i understand that you are asking about the profile of the Consultant if he/she wants a break in another industry. It is generally supposed to be the otherway reound. People who have a wide range of experience in say Automobile industry or Energy Vertical and move to the respective Vertical in ERP as Domain experts or Business Analyst. If one leaves the ES company as a FC, then he/she can join in as a Business Analyst in any other company.
