One part of this famous concoction comes from the Portuguese Jesuits, who settled in Bandra, Mumbai, around the 1500s.
The other part is, well, mashed leftover vegetables cooked in tomato gravy.
It was demanded by and supplied to the Gujaratis & Parsis who made fortunes trading cotton during the American Civil War.
Two questions.
- What is the concoction now known as?
- What was born from the trading sessions of these Gujarati & Parsi cotton traders?
